White Chocolate Raspberry Yogurt Parfaits

Sometimes your healthy snacks need to feel a little naughtier…

I think you do. Because we’re friends. So we speak the same language.

The language of: I’m eating yogurt with berries, so it’s super healthy! What? Oh yes, there’s white chocolate chunks in there, but those don’t really count…because they just add decadent flavor to the dish.

Makes sense, right? Yeah, totally.

So here’s a snack-treat for ya. Your friends will think you’re so cool too if you bring them a snack too…just sayin.

White Chocolate Raspberry Yogurt Parfaits

Yogurt (your favorite neutral flavor, plain or vanilla work best)

Fresh, ripe raspberries

White chocolate bar (I used a Lindt white chocolate bar)

~Create an assembly line: three bowls.

~In one bowl, whisk your yogurt until fluffy and creamy.

~In another bowl, mash the raspberries (reserve a few to decorate the parfaits with). To make them easier to mash, you may want to microwave the berries for 20 seconds or so, to release juices. If the raspberries aren’t sweet enough, sprinkle a little sugar or Stevia on the mashed berries.

~Chop up your white chocolate bar into rough pieces. Place the white chocolate in the third bowl.

~Build your parfaits: In the bottom of your parfait bowls (or jars or shot glasses), carefully spoon in a layer of yogurt. Next, spoon in a layer of mashed raspberries. Then add a bit of the white chocolate. Repeat the layers, finishing with white chocolate pieces and a fresh raspberry.

~Serve and enjoy! For fun, quick snacks, build several parfaits and place them in the fridge, covered with plastic wrap, so they’ll be ready when you need them!

    Simple. Delicious. And made with ‘chocolate’ that isn’t actually chocolate, just cocoa butter, so if we ignore the ‘butter’ part it’s practically health food.

    Nothing like a little Quest-piration! 😉 But seriously white chocolate is entirely UNDERrated! Love the decadent addition to this…last summer, I used to crumble these amazing GF cookies into my yogurt that I would pick up from the farmers’ market each Saturday…it totally balanced out! 😉

      Totally agree about white chocolate! I’ve been on a kick lately! The little white chocolate “yogurt” chips that come in that Sam’s bag of trail mix (you know the one) melt perfectly in oats!
