Raspberry Oat Breakfast Smoothie

The truth is, I’ve been extremely overwhelmed and stressed out lately. Just ask my lovely fiancé or my tolerant mother, both of whom seem to still listen to me rant and rave about everything (often ending in tears).

  

Oh, I’m sorry. Have I ruined your sparkly vision of me? Did you think I have it all together? Well, I’m truly flattered, but unicorns don’t exist.
Good morning. Yes, please. 
The only thing that I do seem to still have a good grasp on, is nutrition and yummy eats. Yes, yummy eats is a real technical term in my personal dictionary.
I feel like breakfast is a way to be able to start every day on a great foot. Whether or not you choose to end the day with something sinful (like these) is yet to be determined, but breakfast makes you feel like you’re starting healthy and new. Big, deep cleansing breath.
You put um both together and whatda ya got? 
So, start your day with this fabulous breakfast smoothie. I’ve incorporated oatmeal into the smoothie which gives it more body and makes it more filling. It’s the perfect wiz-and-go healthy start to your day!
Cheers! Now here’s to another day, totally stress free this time…
Right?
Raspberry Oat Breakfast Smoothie
1 cup unsweetened almond milk
½ large banana
1/3 cup fresh or frozen raspberries
¼ tsp. vanilla extract
¼ tsp. cinnamon
5 drops liquid Stevia (or 2 tsp. sweetener of choice)
½ cup ice
2 Tbs. old fashioned oats
¼ cup water
~Prep: in a small, microwave safe bowl, combine the oats and the water, and microwave until cooked (in my microwave, with this small portion, it took one minute on half-power). Set aside to let cool.
~In a blender combine all of the ingredients except for the prepared oatmeal. Blend until smooth. Finally, add the oatmeal, and pulse just a few times to incorporate the oats and slightly blend them without loosing their texture [though, if you aren’t a “multi-texture smoothie” kind of person, you can wiz away until the oatmeal is completely incorporated].
To incorporate the cooked oatmeal, I chose to use the new smoothie attachment on my KitchenAid 5-Speed Hand Blender*, and I pulsed it a few times to create the perfect texture.
Serve and enjoy!
