No Bake Chocolate Peanut Butter Bars

My No Bake Chocolate Peanut Butter Bars are the perfect, decadent treat to accompany your iced coffee on a summer day! They come together in a snap, with only 5 ingredients! I’ve made the batch small, just in case you inhale the whole thing yourself. You’re welcome!

Remember how I was all psyched up for the Fourth of July? Remember how I couldn’t wait to hack into a watermelon and watch some fireworks? Well… 

Then I became an old lady with a baby and I could not have been more angry at the fireworks going off past 9pm! I know, total Scrooge! The far off fireworks weren’t a problem (this kiddo can sleep through some epic thunderstorms), it was the drive-by sounding bangs that were going off right outside of our windows that jolted him awake. LET US SLEEP!

Lord I’m terrible. 

Maybe the Fourth will be more fun when he’s 3. 

Anyways, on to something terribly delicious. Like, out of this world good. And SO easy. 

No Bake Chocolate Peanut Butter Bars 2

 

There’s a local coffeeshop here that makes these incredible Chocolate Peanut Butter Bars. They’re like a giant Reese’s egg, but homemade and they have a little crispy action to them! Yes, like, a bit of toothsome crisp in there. Every time I’m in there and they have them, I have to order one. It’s like they’re calling my name!

So, we have the dark chocolate, the peanut butter, some magical yumms to make them delicious, a sprinkle of salt on top and crisped rice cereal in the peanut butter layer! It’s like a secret ingredient that should be in all peanut butter bars! 

You can use gluten free Rice Krispies, some fancy gf brown rice krispie cereal, or whatever puffed rice cereal you have on hand. 

The thing with these bars is, I haven’t really “healthed” them up at all. My husband begged me not to. So, to make these even, I kept the recipe as it should be, but I’ve made it a very small batch. I made it in an 8.5×4″ loaf pan!

Now, you have these incredible No Bake Chocolate Peanut Butter Bars that are so satisfyingly sweet, and they’re gone before you feel guilty about it! Hooray! Yeahhhhh you could share some of them, because a loaf pan still makes several bars, but let’s be honest: I ate half the pan and my husband ate the other half. So there’s that.

My No Bake Chocolate Peanut Butter Bars are the perfect, decadent treat to accompany your iced coffee on a summer day! They come together in a snap, with only 5 ingredients! I've made the batch small, just in case you inhale the whole thing yourself. You're welcome! (makes ~8 bars)

Ingredients
  1. 1/2 heaping cup creamy, natural peanut butter
  2. 2 Tbs. softened butter
  3. 1 scant cup powdered sugar
  4. 1/2 tsp. vanilla extract
  5. 1/2 cup gluten free rice krispie cereal
  6. 1/2 cup semisweet chocolate chips
  7. 2 Tbs. more creamy natural peanut butter
  8. sea salt, for sprinkling
Instructions
  1. Line an 8x5x4" loaf pan with parchment paper and spray with nonstick spray (I used coconut oil spray).
  2. In a mixing bowl, combine the peanut butter, butter, vanilla and powdered sugar. Use a wooden spoon or sturdy spatula to stir until completely combined. Add the rice krispie cereal and stir in (I used my fingers to stir at this point). Press this into an even layer in the loaf pan.
  3. In a heat-safe bowl, melt the chocolate (use your microwave in 30 second increments or over a double-boiler). Once the chocolate is melty, add the 2 Tbs. of peanut butter and stir until smooth. Pour this in a layer on top of the peanut butter krispie layer and smooth over with a silicone spatula.
  4. Refrigerate until the chocolate layer is set (about an hour). Once it is set, sprinkle the top with some sea salt, use the parchment to lift out the bars, cut and eat! Enjoy!
Notes
  1. Keep the peanut butter bars in the fridge, covered with plastic wrap, for up to 5 days. You can also store them in the freezer for a few months. But seriously, you'll have eaten them all by then.

RECIPE EDIT: I’ve also tried this recipe with coconut sugar instead of powdered sugar and it’s delicious! Just sub 1/2 c of coconut sugar for the full amount of powdered sugar!

      Oh girl, I can justify ANYthing! Peanut butter is healthy…rice krispies are practically air…dark chocolate contains antioxidants…these bars are practically medicinal! Haha!
