Watermelon Feta Salad

This Watermelon Feta Salad is a staple in my summer diet. It’s a great way to use up all of that juicy watermelon that’s filling up your fridge. With minimal ingredients, it comes together in a snap, and you can even keep it fully made in the refrigerator for days.

I’m watching Groundhog Day for the thousandth time and I’m pondering a problem I’ve come across every summer…sense a theme?

I always greatly underestimate the size of the watermelon I choose at the store! I always pick one that looks small to me…but then I start hacking into it and realize I have a TON of watermelon.

For the Fourth of July weekend, I knew my brother would be in town, so I bought a melon. And we are STILL eating wedges from the fridge, over a week later and back to just the two of us eaters. On a sidenote, please don’t tell me that watermelon is only good for 3 days after you cut it…I just don’t want to know at this point.

Anyways. There’s only so much Watermelon Agua Fresca you can chug, amiright?

Next in line in our must-eat-all-the-watermelon quell is my favorite Watermelon Feta Salad!

I swear I got on such a kick, eating this everyday last summer while I was pregnant.

It is so refreshing, salty-sweet, savory-sweet…all the good things.

There are a lot of versions of this salad out there, yes. But this is my favorite. I just had to share! And trust me, it is SO simple. And it comes together in a snap. And I love that you can make a huge batch of it and keep it prepped in the fridge for days, ready to eat whenever you want it.

Watermelon Feta Salad

This Watermelon Feta Salad is a staple in my summer diet. It's a great way to use up all of that juicy watermelon that's filling up your fridge. With minimal ingredients, it comes together in a snap, and you can even keep it fully made in the refrigerator for days. (makes 3 servings)

Ingredients
  1. 4 cups chunked watermelon
  2. ¼ a red onion, sliced thin
  3. 3 Tbs. chunk feta
  4. 1 Tbs. chopped fresh basil
  5. 1 Tbs. chopped fresh mint
  6. juice of ½ a lime
  7. 2 tsp. extra virgin olive oil
  8. salt and pepper
Instructions
  1. In a bowl, toss together the watermelon, onion, feta, basil and mint. Squeeze the lime over the top and drizzle on the olive oil. Add a large pinch of sea salt and a few grinds of black pepper. Toss the salad together. Serve, enjoy!
  2. You can prepare the salad and cover with plastic wrap and keep in the fridge for up to 3 days!

To my wonderful husband, Happy dating Anniversary. It may be cheesy to still celebrate it, but we do and it fills my heart with joy. I’m so glad that 6 years ago today I caved and finally let you take me on a date. I’m glad you were so persistent.
