First of all, the winner of my Cookbook Giveaway is...drum roll..."Bianca"!! Her response was: "OMG!! There's a book of cookie dough recipes! I NEED THAT! My fave flavor is, of course, chocolate chip...we all know if doesn't get much better than that." Well Congratulations Bianca! You'll have it!  And to celebrate the announcement of the winner of my cookbook giveaway, I’ve made another skinny … [Read more...]

Drunken Date and Honey Oat Cake

June 22, 2012 by Melissa

I made this cake and had to wrap it up and tuck it in the fridge to keep myself from eating the whole thing. It is one of those cakes that is all fruit and barely any batter, and it tastes like a toasty oat bran muffin, sweet with honey, and a punch from the drunken dates and raisins. If you don’t like raisins, feel free to use all dates, but the golden raisins add a slightly different sweetness … [Read more...]

Maple Glazed Almonds and Cashews

June 20, 2012 by Melissa

The other morning I was making pancakes for my boyfriend, and he drenched them in maple syrup. Upon thinking about it, I was never one for a ton of syrup when I was a kid (it shouldn’t come as a surprise but I couldn’t stick to one flavor to save my life, so I loved spreading different jams on my pancakes), so I’ve never really appreciated maple until recently.I’ve started being really drawn to … [Read more...]

Healthier “Back in the Day Bakery” Banana Bread

June 19, 2012 by Melissa

I think people would be surprised at the cookbook collection I hold. A lot of people assume that my shelves are full of healthy-living cookbooks, but that’s just not true. I love reading about all the fun and indulgent treats out there, and then transforming them all on my own so I can experience them too (with just a little less of the guilt).Take, for instance, the wonderful  Back in the Day … [Read more...]

A GIVEAWAY and Chocolate Chip Cookie Dough Sandwich Cookies

June 18, 2012 by Melissa

[Giveaway announced at the bottom of this post…]I was always that kid with her hands in the bowl of cookie dough while my mom was trying to scoop it onto baking sheets. I use to run full-force to the kitchen at the first inkling that cookies were being made because I didn’t want to miss the dough! Forget the cookies! As I got older, this certainly didn’t change. I remember one time when my mom and … [Read more...]

Cherry Almond Shortbread Sparkler Cookies

June 15, 2012 by Melissa

Remember my Christmas stories about how my dad is obsessed with almond-flavored, green Christmas tree cookies? No? Well, you can read thisas a refresher.Anyways, that is what inspired my Father’s Day cookie gift to him. Although the cookies I sent him weren’t green, they did taste like almonds and I’m sure he’ll love them, despite their shortcomings. To give you an idea of the ones I sent him, … [Read more...]

Cinnamon Crunch Clusters Cereal

June 14, 2012 by Melissa

Making your own cereal is a great way to know what exactly you're getting when you pour your morning bowl. You start with a 100% basic puffed rice cereal, and then follow the same procedures as when you're making granola. The result is a low calorie, all natural cereal that is all yours and guilt-free. I love that you can mix up the spices and add fruits and nuts when you build your breakfast in … [Read more...]

Vegan Peanut Butter Blondies

June 13, 2012 by Melissa

Remember the peanut butter blondie I had at the Vegan BakeSale? I do! I can’t get it out of my head. And thus, knowing where the recipe came from, I did some tweaking and enjoyed some Vegan Peanut Butter Blondies of my very own! These are thick and rich and nobody would even guess that they’re dairy free. Seriously, you’ll want them with a scoop of vanilla ice cream or a big glass of almond milk… … [Read more...]

A Few New Snacks: Larabar and CLIF Bar

June 12, 2012 by Melissa

Hey everyone! I just wanted to let you know about a few new snacks that have come out lately.1. The Larabar Uber Bar: This new bar from Larabar is different because it strays from their traditional formula, which results in a chunky fruit and nut bar. I really like it, too! There are four flavors, two of which fall under the 200 calorie mark, which means they get my stamp of snack approval! I love … [Read more...]
